LAY'S<sup>&reg;</sup> QUARTERBACK CHICKEN SLIDERS with PEPSI<sup>&reg;</sup> CANDIED BACON Cook Time

Ingredients:

Chicken

  • 4 chicken breasts (cut in half on a bias across the breast, then very lightly pounded to make them an even thickness, about 3/8 of an inch)
  • 2 tsp. kosher salt
  • 1/2 tsp. ground black pepper
  • 1/4 tsp. ground white pepper
  • 1/2 tsp. sugar

BREAD & FRY THE CHICKEN

  • 2 cups all-purpose flour
  • 2 Tbsp. potato starch
  • 1 tsp. fine salt
  • 1 tsp. ground black pepper
  • 1/2 tsp. ground white pepper
  • 1/8 tsp. cayenne pepper
  • 3 cups Lay’s® Original Kettle Cooked potato chips, crushed (small pieces but not tiny crumbs)

Bacon

  • 8 strips Applewood smoked bacon, cooked crisp
  • 2 cans Pepsi® cola

Sliders

  • Slider buns or potato rolls, toasted
  • Mayonnaise
  • Dill pickle chips

Make the play:

Chicken

  1. The night before, sprinkle the chicken breasts with salt, pepper and sugar. Refrigerate overnight.
  2. Sift together the flour, potato starch, salt and spices. Split this mixture in half.
  3. Mix half of the mixture with the broken chips.
  4. Dredge each piece of chicken in the flour without chips, then dip in water, shaking off excess water, then back in the flour. Repeat one more time in the flour without chips, then dip in water, shake off and dip in the flour with the chips.
  5. Fry at 350ºF for about 5 minutes, or until the internal temperature of the chicken reaches 165ºF. Remove from the fryer and rest on paper towels to drain off excess oil. Serve after resting for 5 minutes or hold warm in a 200ºF oven for up to 20 minutes.

Bacon

  1. In a small sauce pot, bring the Pepsi® to a boil and cook until it is reduced to just 2 or 3 Tbsp. of syrup.
  2. Preheat oven to 325ºF.
  3. Brush the crisp bacon liberally on both sides with the Pepsi® syrup and place on a baking sheet with a rack.
  4. Cook for about 8–10 minutes, until the glaze is like sticky candy.
  5. Remove from the oven and set aside to cool, then warm for 2 minutes before serving.

Sliders

  1. To build each slider, toast bun or roll. Add 1 Tbsp. mayonnaise, 3 dill pickle chips, 1 piece Lay’s® Kettle Cooked fried chicken breast and 1 piece Pepsi® glazed bacon (cut in half).
